This recipe is for all of my spicy food lovers!! It takes a classic pasta dish like creamy rigatoni to the next level.The chipotle peppers and adobo sauce give the pasta sauce a smoky, spicy kick that's not too overpowering, while the heavy cream and Parmesan cheese give it a rich, savory flavor that balances out the heat from the peppers. This results in a dish that's packed with bold flavors that complement each other perfectly. This pasta dish is my go to dish to make for planned dinner parties, to take to a potluck or just when I am feeling like eating a big bowl of pasta and watching a movie at home. It has become a recipe that is requested by so many family members and friends that I feel like I can make it blindfolded now! If you are hoping to expand your pasta recipes, this is an easy recipe to incorporate into your line up. One thing that I love about this recipe is that the two main ingredients have amazing shelf life and last well in the freezer as well. The tomato paste and chipotle peppers once opened last a long time and I have many other recipes which make it easy to use up those ingredients so you can ensure nothing goes to waste in your kitchen. One of the amazing things about this recipe is that it is super versatile. If you aren’t too keen on spicy foods you can adjust the amount of chipotle peppers you add or even just add the sauce that they come with and not chop up the pepper itself to get the flavor without the heat. Furthermore, if you are looking to add more protein to this you can swap the pasta for a chickpea pasta or protein pasta. Some of my personal favorites are from the brands Banza and the protein + line from Barilla. Another option would be to pair the pasta with some chicken and shrimp or any meat alternative or vegan protein of your liking. Lastly, this sauce works with any pasta shape. I personally prefer rigatoni but if you want to experiment with other types of pastas; I would recommend penne or fusilli. This is because those are both shapes when tossed with sauces.
