One of my favorite recipe “trends” that has taken over both Tik Tok and Instagram for quite a while is the smashed chickpea sandwich trend. It is such an easy way to not only meal prep but to use up that can of chickpeas that is sitting in your kitchen pantry. It is also an extremely versatile recipe because you can have it not only in a sandwich but with crackers or even wrapped up in a tortilla. It can also be served with a variety of vegetables like shredded carrots and cabbage, lettuce, onion, spinach, sprouts, tomatoes and the list goes on! Because of the amount of protein and fiber that comes with eating chickpeas it is a dish that can keep you fueled for an activity that you are taking on in your day. It is also packed with flavor. The chipotle pepper in adobo sauce adds a smoky, spicy kick to the sandwich making it extra flavorful and different from a regular chickpea salad or tuna salad sandwich. Furthermore, this is a great recipe of course for everyone but especially for those with dietary restrictions. It can easily be made vegan by substituting the regular mayonnaise for vegan mayonnaise and using vegan sliced in place of regular cheese. Like mentioned above it can be paired with so many different kinds of vegetables and can also be served with gluten free or any grain free breads based on an individual's needs. It is an overall an amazing alternative to your typical meat-based sandwiches and can be enjoyed by anyone looking for a delicious, plant based meal. This sandwich can also be served both cold and hot. When I serve it hot, I like to use a panini press and get those beautiful grill marks and let the chickpea mixture and melted cheese marry. It is after I take it out of the panini press or stovetop that I add in lettuce or any other toppings that would wilt with heat. For serving it cold, I do not toasted the bread and I swap the ciabatta bread for a multigrain bread loaf, I personally love using the Dave’s Killer Bread brand for this. I pack on the chickpea salad and additional vegetables and serve it up. It is overall a go to and easy meal that does not skimp on the flavor.
